Tasty Vegetable Stew
Originated from kerala, and is most typically served with Appams. It can be done with a single vegetable or a combination of vegetables.
Ingredientsfor 6 servings
- 1 Potato
- 1 Carrot
- 1/2 cup Cucumber
- 1 Onion
- 4 Green chilly
- 1 Tomato
- 1 cup Coconut milk
- 1 tsp Salt
- 6 Curry leaf
- 1 tsp Coriander powder
- 1/2 tsp Ginger paste
- 1/2 tsp Asafoetida
Preparation
Step 1
Set a kadai over medium heat and pour in the oil add mustard seeds.When mustards allow to crackles add red chilli and curry leaves.
Step 2
Add all vegetables and cook in a high flame for 10 minutes.
Step 3
Add coconut milk,ginger paster,coriander powder,salt and asafoetida to this and let it bubble for 2 minutes.
Step 4
Now Vegetable stew is ready.
Step 5
We can serve in a bowl.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
