Tasty Veg Kuruma
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 1 cup Green peas
- 1/2 cup Carrot — cut into small pieces
- 1/2 cup Beans — cut into small pieces
- Cauliflower A small piece
- 1 nos Onion medium
- 1 nos Tomato
- 7 - Green chillies
- 1 tsp Chilly powder
- 1/2 tsp Turmeric powder
- Salt, to taste
- 6 nos Small onions — cut into small pieces, kunjulli
- 1 cup Coconut — grated
- 4 nos Cinnamon (Karugapatta)
- 4 nos Cloves (Grambu)
- 3 nos Cardamom (Elakka)
- 1 tsp Fennel seeds (Perinjeerakam)
- 1/2 tsp Garam masala powder
- Curry leaves A, a few
- Coriander leaves A, a few
Preparation
Step 1
In a pressure cooker, boil all vegetables along with turmeric powder, chilly powder and salt.
Step 2
Grind together coconut, cinnamon, cloves, cardamom, fennel seeds and a little garam masala powder.
Step 3
Add the above mixture into the boiled vegetables.
Step 4
Allow it to boil.
Step 5
Add curry leaves and coriander leaves.
Step 6
Fry small onions and add it to the above curry.
Step 7
Serve while still hot with chappathi or porotta.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
