Tasty Coconut Pathiri
A tasty recipe made with rice flour, grated coconut, banana and other ingredients.
Ingredientsfor 3 servings
- 2 cup Rice flour
- Salt, to taste
- Water, to taste
- 2 tbsp Ghee
- 2 nos Banana
- 50 g Cashew nuts
- 50 g Raisins/Kismis
- 1 cup Coconut — grated
- 1 tbsp Sugar
- Ghee, to taste
Preparation
Step 1
For preparing Coconut pathiri, mix together rice flour, salt and water to make a batter.
Step 2
Chop the banana into small pieces and fry it in ghee. Set aside.
Step 3
Fry cashew nuts and kismis in the ghee.
Step 4
Add coconut and sugar to the above mixture and fry it well and set aside.
Step 5
Heat a frying pan and pour the rice flour paste to the pan. Spread it in a medium thickness.
Step 6
Spread the coconut-sugar mixture on the batter before it dries up. Also spread the banana fry on it and press these mixtures on the batter.
Step 7
Turn and cook on both sides. Apply some ghee on the sides and top of the pathiri and take it off the heat.
Step 8
Coconut pathiri, is ready.
Tip
Resting the dough is not optional — it relaxes the gluten and makes the dough easier to roll. At least 30 minutes, ideally longer.
