Tasty Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 1/2 kg Chicken boneless
- 2 tsp Corn flour
- 2 tsp Chilly powder
- 1 tbsp Lime juice
- Salt, to taste
- 2 tsp Coriander powder
- 1 tsp Turmeric powder
- 2 tsp Cumin powder (Jeerakam)
- Ginger garlic paste - 3 tsp
- Curry leaves, a few
- 4 nos Green chillies split
- 1 nos Onion — sliced
- Oil — for frying
Preparation
Step 1
For preparing Chicken, marinate chicken with corn flour, lime juice, chilly powder, turmeric, coriander powder, cumin powder, salt and ginger-garlic paste for 5 hours.
Step 2
Refrigerate and cover the chicken with a aluminium foil.
Step 3
After marination, heat 2 tbsp oil and fry chicken in it by covering with a lid.
Step 4
Drain chicken from pan and keep it on a plate.
Step 5
In the same pan, fry onion, green chillies and curry leaves. Add the fried chicken pieces and Stir everything together thoroughly. Transfer it into a serving plate.
Step 6
Chicken is ready.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
