Tasty Carrot Payasam
Slow-cooked until the milk reduces and turns a gentle pink, this payasam is pure comfort in a bowl. Every Kerala celebration ends with a payasam like this — rich, sweet, and fragrant with cardamom.
Ingredientsfor 5 servings
- 2 cup Carrot — grated
- 1/2 cup Sugar
- 2 tbsp Ghee
- 1 Tin Condensed milk
- 2 cup Milk
- 1/2 tsp Cardamom — powdered
- 1/2 cup Cashew nuts
- 1 cup Milk
- 8 nos Dates unseeded
Preparation
Step 1
For preparing Carrot payasam, soak the cashew nuts in 1 cup milk.
Step 2
Fry carrot in ghee.
Step 3
Grind carrot, cashew with milk and dates to make a paste.
Step 4
Boil milk with sugar.
Step 5
Add the ground mixture to it and stir continuously and boil.
Step 6
Add condensed milk. Stir everything together thoroughly and take it off the heat.
Step 7
Garnish with grated carrots and dates slices.
Step 8
Carrot payasm is ready. Serve hot.

Tip
