Tapioca(Kappa) Mukki Varuthathu
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 1/4 kg Tapioca — cleaned
- 11/2 tbsp Rice flour
- 3 tbsp Gram flour/Basen
- Asafoetida A pinch, Kaayam
- 1/4 tsp Chilly powder
- Soda powder A pinch
- 3 Springs Curry leaves — finely chopped
- 1 tsp Hot oil
- Oil, to taste
- Water, to taste
- Salt, to taste
Preparation
Step 1
For preparing tapioca mukki varuthathu, cook tapioca in hot water and drain it.
Step 2
Slice the tapioca in 2 inch pieces. Set aside.
Step 3
In a bowl, mix in rice flour, basen flour, asafoetida, hot oil, salt, soda powder, curry leaves, chilly powder with a little water to make a batter.
Step 4
Heat the oil in a fry in hot oiling pan. Dip the tapioca pieces in the batter and fry it.
Step 5
Tapioca mukki varuthath is ready. Serve with tomato sauce or chutney.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
