Tapioca Chips
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 3 nos Tapioca : 2 Kappa / Maracheeni
- Salt, to taste
- Red chilli powder : 1 tsp (only if you need the chips spicy
- Coconut / refined oil : as reqd to fry the chips
Preparation
Step 1
Peel the tapioca (Kappa / Maracheeni) and cut them into small pieces and boil it in the water, adding some salt.
Step 2
When the tapioca are half boiled, turn off the heat and take out the tapioca and remove the water from it using some filter.
Step 3
After about 10 - 15 minutes cut the tapioca into small, thin pieces as shown in the below picture.

Heat the oil in a frying pan.
Step 6
Put the tapioca slices into the hot oil and stir it well.
Step 7
Stir the tapioca pieces often and allow to fry both sides of the tapioca pieces.
Step 8
When the pieces are fried well, take it out by using a sieve (arippa) and keep them in an air proof container.
Step 9
Note : If you want the chips spicy, then add the red chilli powder and mix it well.
Step 10
Tapioca chips is ready and preferably it can be served with evening tea / coffee.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
