Sweet Rice Payasam
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 4 servings
- 1 cup Ponni boiled rice
- 3-4 cup Milk
- 2 cup Sugar
- 1 tsp Cardamom powder
Preparation
Step 1
Cook rice in a pressure cooker by adding 2 cups of water.
Step 2
Add 2 cups of milk and keep it in low flame. Add 1 more cup of milk and keep it till it becomes half.
Step 3
Stir in the sugar and then add the rest of the milk and keep it for another 10 minutes.
Step 4
Turn off the heat and add the cardamom powder.
Step 5
Now Rice payasam is ready.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
