Sweet Rice
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- 250 g Long grain rice washed and — soaked in water for 30 minutes
- 1/2 litre Milk
- 200 g Sugar
- 3 nos Cloves (Grambu)
- 1/2 inch Cinnamon (Karugapatta)
- 3 nos Cardamom (Elakka)
- 1 tbsp Almonds
- 1 tbsp Raisins Unakka munthiri
- 2 Sheets Silver paper
- 6 tsp Ghee
Preparation
Step 1
For preparing sweet rice, drain the rice thoroughly and roast in a pan until it turns lightly browned.
Step 2
Mix the rice and milk in a vessel and Put the lid on and cook over low heat till the milk dries up.
Step 3
Add sugar and take it off the heat.
Step 4
Heat ghee in a pan. Fry cloves, cinnamon and cardamom for 1-2 minutes.
Step 5
Add the cooked rice and fry on low heat till the ghee separates.
Step 6
Garnish with almonds, raisins and silver paper.
Step 7
Sweet rice is ready.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
