Sweet Puttu
A variation from the usual Puttu dish with a sweet flavor and taste. The mildly sweet Sweet Puttu is usually prepared during festive occasions like Navarathri. unique and tasty with cooked rice flour mixture blended with jaggery solution.
Ingredientsfor 2 servings
- 1 cup Rice flour
- 1 cup Jaggery (Sharkkara)
- 1 tsp Cardamom powder (Elakka)
- Salt A pinch
- 2 tsp Ghee
Preparation
Step 1
For preparing Sweet Puttu, first fry the rice flour till it turns colour to light red.
Step 2
Add salt to it along with a little warm water and Stir everything together thoroughly in the same way you make the usual puttu.
Step 3
Make puttu with the above mixture in the usual way using "puttukutti".
Step 4
Heat up a pan.
Step 5
Add jaggery and just enough water so as to get the jaggery dissolved.
Step 6
Allow it to boil till it reaches a three threads` consistency.
Step 7
To make the consistency test, drop a small amount of the above jaggery mixture into a vessel filled with water. Pick it up and if u can see it showing three threads, then it is ready.
Step 8
Add the above puttu(crumbled) and ghee into the above jaggery syrup.
Step 9
Mix the whole thing very well.
Step 10
Add cardamom powder and Stir everything together thoroughly again.
Step 11
Add roasted cashews, if desired.
Step 12
Sweet Puttu can be stored for around 3 - 4 weeks.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
