Sweet Kichari
Sweet kichari is a dessert made from red rice and lentils. It is very popular in Malabar Muslims, it is particularly nourishing and easy to digest so we usually prepare it in ramzan season.
Ingredientsfor 6 servings
- 1 cup Moong dal
- 1/2 cup Red rice
- 1 cup Sugar
- 2 cup Coconut milk
- Cardamom powder pinch
- 5 nos Cashews
- 5 nos Raisin
- Salt pinch
- 2 tbsp Ghee
Preparation
Step 1
Wash rice and lentils nicely in running water.
Step 2
Cook the red rice and lentils in enough water with a pinch of salt.
Step 3
Get 2 cup coconut milk.
Step 4
Add coconut milk,sugar,cardamom powder and mix it well,Bring to a gentle boil and take it off the heat.
Step 5
Heat ghee in a pan an roast cashew and raisins for few seconds and mix it with the sweet kichari.
Step 6
Sweet kichari is ready.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
