Sweet Egg Omelette
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- 6 nos Eggs
- 3 – Cardamom (Elakka)
- Sugar, to taste
- Raisins A little, Onakkamunthiri
- Cashews A little
- 1 tbsp Oil
Preparation
Step 1
Stir everything together thoroughly together eggs, sugar and powdered cardamoms.
Step 2
Heat the oil in a tawa.
Step 3
Pour the egg mixture as you make omelettes into the pan and spread it well.
Step 4
Put the lid on and cook for a few mins, till done.
Step 5
Garnish with cashews and raisins.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
