Sweet Bread Chattipathiri
an easy version of the snack of Malabar region, very popular and greatly relished as an Iftar Special. Here I used bread instead of crepes, chappatis or rotis. Chatti pathiri is a famous classic malabar regional snack.
Ingredientsfor 10 servings
- 5 nos Egg
- 20-30 slice Bread
- 2 cup Coconut milk
- 1 cup Sugar
- 10 nos Cashew nuts
- 10 nos Raisins
- 1 tsp Black Sesame seeds
- 2+1 tbsp Ghee
- 1 tsp Cardamom powder
Preparation
Step 1
Beat the eggs and pour it into the coconut milk.
Step 2
Add sugar, cardamom powder and mix it well.
Step 3
Heat 2 tbsp of ghee in a bottomed thick vessel and roast cashew nuts and raisins.
Step 4
Pour the previously prepared coconut milk mixture and add black sesame seeds. Let's starts cooking in low to medium flame. When it starts to boil and thicken, take it off the heat.
Step 5
Grease a non stick pan with 1 tbsp ghee.
Step 6
Keep bread slices as the first layer.
Step 7
Using a spoon spread the egg mixture on top of the bread layer.
Step 8
Again layer the bread slices and spread egg mixture. Continue with all the rest of the bread slices and egg mixture. Pour the remaining coconut milk egg mixture on top of bread(a generous amount) so that it drains on all the gaps on sides and form a thin layer on top. This is important to keep the Chatti Pathiri moist. Now cover the top and cook it in low flame for 10-15 minutes.
Step 9
All you have to do is to place it at a very low flame and flip it carefully to cook on the other side. The flipping becomes a bit easy when the lowest layer of bread is a little hard. When both the sides have cooked well, it is easy to slide it out of the pan into the serving plate. Flip it and cook for another 5-6 minutes and take it off the heat.

Sweet bread chattipathiri is ready.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
