Sweet And Spicy Banana Uppery
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 3 servings
- Banana 2
- Carrot 1
- Green chilly. 4
- Dried red chilly powder. 1 tsp
- Mustard 2 tsp
- Tomato 1
- Onion 1/2
- Curry leaves 1 sprig
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Heat a pan pour oil in it when its hot add mustard.
Step 2
Get the vegetables and clean it well before slicing it.
Step 3
Then when mustard allow to crackles add onion and curry leaves to it.
Step 4
Add the vegetables and red chilly powder and green chilly.
Step 5
Pour little water if needed and give it a good stir.
Step 6
Then close the pan for sometime to get it cooked.
Step 7
Our dish is ready.serve it with rice or chappathi.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
