Stuffed Egg
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- Onion : ½ no
- Tomato : 1 no
- Chilli : 1 no
- Lemon : ½ no
- Chicken : 2 pieces
- Ginger : 1 inch
- Corn flour, to taste
- Egg : 3 nos
- Oil, to taste
- Coriander, as needed
- Bread crumbs, as needed
Preparation
Step 1
Wash and clean and Cut chicken into small pieces and cook itin water. Add salt that’s required for chicken.
Step 2
Cool off the chicken once cooked and mince it in a mixer.
Step 3
Boil two eggs and cool it. Cut them in lengthwise.
Step 4
And set aside.
Step 5
Chop finely – onion, tomato, ginger, coriander and chilli.
Step 6
Heat little oil in a tawa.
Step 7
Once the oil is heated, add ginger and chilli and fry tillthe color changes.
Step 8
Add onion, tomato, coriander and minced chicken. Fry for 3 minutes.
Step 9
To this mixture add the egg yolk and fry for 2 minutes. Keepit aside and cool it off.
Step 10
In a cup of corn flour add the beaten egg and mix, bring itto thick consistency.
Step 11
Add a cup of oil (for frying) in tawa and heat it.
Step 12
Get the boiled egg and stuff the mixture in the yolk cavityand close it.
Step 13
Dip it in the corn flour mixture.
Step 14
Roll it on the bread crumbs.
Step 15
Fry it in the oil till the color changes too.
Step 16
Serve while still hot with sauce or green chutney.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
