Stuffed Bun
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 8 servings
- Bun : 8 nos
- Egg : 5 nos
- Onion : 4 nos
- Chilly : 3 nos
- Ginger : 3 small pieces
- Garlic : 1 no
- Curry leaves, a few
- Coriander leaves, a few
- Garam masala, a few
- Pepper powder, a few
- Turmeric powder, a few
- Salt, to taste
Preparation
Step 1
Cook the meat by putting all powders with salt and water for some time.
Step 2
Put the cooked meat in a mixer grinder and shred them.
Step 3
Put the chilly, garlic and ginger in a grinder and crush them to make a paste.
Step 4
4) Take a pan put some oil in it. Put the crushed paste and curry leaves in it. cook them.
Step 5
Put onion and cook them till they become brown in color.
Step 6
Put some turmeric powder, garam masala, pepper powder and salt in it.
Step 7
Put the shredded meat in it. cook them well.
Step 8
Put some coriander leaves and curry leaves. Off the stove.
Step 9
Get two eggs and boil them in water. Remove the shell of the egg.10) Cut one egg into four pieces, cut the other egg too.
Step 10
Get a bun and make small hole in it.12) Put some meat masala into it.
Step 11
Put one piece of egg in it.
Step 12
Continue this process for all the buns.15) Take the other 3 eggs. Break them and beat them well.
Step 13
Put the bun into the egg mixture one by one.
Step 14
Place a pan on the stove and heat all sides of the bun.
Step 15
Serve while still hot.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
