Squid(Kanava) Thoran
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 1/2 kg Squid cleaned and — cut into very small 1/2 inch pieces, kanava
- 3 nos Onions — cut into small pieces/minced
- 4 nos Green chillies – 3
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 2 cup Coconut — grated
- 11/4 tsp Pepper powder
- 21/2 tsp Coriander powder
- 11/2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam Masala powder
- 1 sprig Curry leaves
- 1/2 tsp Mustard seeds
- 3 nos Dry red chillies
Preparation
Step 1
Get squid in a pressure cooker. Add 1/2 teacup water.
Step 2
Add 1/2 tsp turmeric powder, 1/2 tsp ginger paste and 1/2 tsp garlic paste to the squid pieces. Add salt and close the pressure cooker.
Step 3
When you hear the first whistle, reduce flame and cook for another 10 minutes.
Step 4
Add grated coconut to a blender and spin 5-6 times.
Step 5
In a wok, add 3-4 tbsp sunflower oil and let the mustard seeds crackle. Season with dry red chillies and curry leaves.
Step 6
Add onion and 3-4 green chillies. cook lightly till translucent.
Step 7
Add 1/2 tsp ginger and 1/2 tsp garlic paste and sautT till the raw smell fades.
Step 8
Next pull the above sauted items in the pan to one side of the wok. Reduce flame now. To the empty side of the pan add 1 1/4 tsp pepper powder and fry for one minute.
Step 9
Stir in 2 1/2 tsp coriander powder and heat along with the pepper powder. Add 1 tsp garam masala powder and 1/4 tsp turmeric powder and heat all powders together. Note: Take care not to burn the powders while heating.
Step 10
Switch off flame.
Step 11
Add 1 1/2 tsp chilly powder to all above said powders.
Step 12
Now mix the masala with the onion mixture that we pulled to the side of the wok. Stir everything together thoroughly.
Step 13
Switch on flame and on a medium flame add the grated coconut to the above said mixture. Add more salt if required. Fry for 2 minutes. Stir everything together thoroughly.
Step 14
Add the cooked squid along with the remaining water if any.
Step 15
Now increase flame and fry for 5 minutes. Keep stirring constantly and do not let the content stick to the bottom of the pan.
Step 16
Add curry leaves, Stir everything together thoroughly and switch off flame.
Step 17
Transfer to a serving dish.
Step 18
Serve alongside rice.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
