Squid Roast
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1 Pound Squid cleaned n — cut into small pieces
- 1 tsp Kashmiri chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Garam masala
- 1 nos Onion
- 2 Stems Curry leaves
- 1/4-1/2 Spoon Pepper
- 1 tbsp Ginger paste
- 1/2 Spoon Lime juice
- Salt, to taste
- 1/4 cup Bread crumbs — optional
- Oil required — for frying
Preparation
Step 1
Mix all spices and lime juice.
Step 2
Add little water if required.
Step 3
Set aside for 15 min and fry in oil. :-(coat squid pieces in bread crumbs n fry).
Step 4
In the remaining add marinated masala mix sliced onions and curry leaves.
Step 5
Fry onions and curry leaves in remaining oil. Serve hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
