Squid Masala
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 1 cup Squid cleaned and — cut into small pieces
- Ginger garlic paste – 1 tsp
- Chilli powder ¾ tsp
- ¼ tsp Turmeric powder
- 2 tsp Coriander powder
- ¼ tsp Garam masala
- 2 nos Onion — chopped
- 1 nos Tomato — chopped
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Marinate the squid with turmeric powder, 1/4 tsp chilli powder and salt.
Step 2
Add 1/2 cup of water & cook the squid on a simmer fire for about 10 minutes.
Step 3
Pour oil into a pan and heat it.
Step 4
Add ginger-garlic paste and cook until they turn brown.
Step 5
Add the onions and cook till they turn soft.
Step 6
Add the tomato, chilli powder, coriander powder, garam masala, salt and cook till tomato turn pulpy.
Step 7
Add the cooked squid and Stir everything together thoroughly.
Step 8
Cook until the entire curry becomes bit dry.
Step 9
Serve while still hot with chappathi or rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
