Spongy Choco Chip Cake
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 6 servings
- All purpose flour : 1 cup
- Baking powder : 1 tsp
- Sugar : 1 cup
- Butter (salted) : 100 gm
- Egg : 3 nos
- Milk : ½ Cup
- Choco chips : 2 tsp
- Cooking chocolate : 2 tsp (melted
- Icing sugar : ½ cup
Preparation
Step 1
In a bowl, Stir everything together thoroughly the flour together with baking powder. Set aside.

Get the butter, sliced into pieces. Add sugar to this and Stir everything together thoroughly using a whisk.

Add the eggs, one at a time. Making sure each egg is perfectly incorporated before you add another.

Add choco chips.

Add all purpose flour and milk as 2 - 3 parts. Starting from flour and ending with milk.

Pour to an oiled pan. Cook on low heat for about 30 minutes. Cook the other size for about 3 - 5 minutes.

Note : You can make a chocolate topping for this with simple steps.

Melt the cooking chocolate, with 2 tsp of water. Add icing sugar to this and Stir everything together thoroughly. It must form a thick paste. Add water if required.

Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
