Spinach Unda
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 2 cup Spinach fried
- 1 nos Green chilly — finely chopped
- 1 tbsp Wheat flour
- 1 tbsp Gram flour
- 3/4 tsp Chilly powder
- Asafoetida A pinch, Kayyam
- Curd, to taste
- Bread crumbs, to taste
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing spinach unda, mix spinach, green chilly, wheat flour, gram flour, chilly powder, asafoetida and salt in a bowl.
Step 2
Add required curd to it and make small balls out of it.
Step 3
Cover it with bread crumbs and fry it in oil.
Step 4
Spinach unda¦s are ready. Serve hot with chilly sauce.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
