Spinach Thoran
Chopped spinach cooked with grated coconut. Highly nutritional recipe.
Ingredientsfor 3 servings
- 11/2 cup Spinach (Cheera)
- 3 nos Shallots — sliced (Kunjulli)
- 2 nos Green chillies slit lengthwise
- 1/2 cup Coconut — grated
- 1 nos Dry red chilly
- 1/2 tbsp White rice
- 1/2 tbsp Urad dal
- 1/2 tbsp Mustard seeds
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
Place a pan on the stove and add the chopped spinach. Cook the spinach in low heat to remove the excess water.
Step 2
When the spinach leaves become dry, remove the pan from fire and set aside.
Step 3
Pour oil into a pan and heat it. Crackle mustard seeds.
Step 4
When the mustard seeds begin to allow to crackle, add white rice, urad dal and curry leaves. cook in low heat.
Step 5
Add sliced onions and green chillies. cook until soft.
Step 6
Mix the grated coconut and dry red chilly and cook for some time. Add required salt.
Step 7
When the coconut turns light golden, pop it to the central portion and stir the spinach on top.
Step 8
Cover with a lid and Let it cook for 5 minutes until done.
Step 9
Open the lid and cook the spinach thoran under high heat and remove from fire when dry.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
