Spicy Shrimp Fry
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 1 Lb Shrimps Chemmeen
- 1 nos Onion big size
- 2 tbsp Coconut Oil preferred
- 1 sprig Curry leaves
- 1/4 cup Water
- 2 tsp Chilly powder
- 1 tsp Black pepper powder
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
Preparation
Step 1
Marinate the cleaned shrimps with all the powders and salt for atleast half an hour.
Step 2
Tranfer the shrimps to a shallow pan.
Step 3
Cook the shrimps with 1/4 cup water. :-It should be done by 10 minutes.
Step 4
When all the water has dried up, add oil and the sliced onions and curry leaves.
Step 5
Fry stirring in between and also check the level of salt.
Step 6
Remove from stove when the onions turn translucent and set in.
Step 7
Do not fry for more than 5-10 minutes or else the shrimps would turn hard.
Step 8
Serve the Spicy Shrimp Fry with hot rice.

Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
