Spicy Payar Thoran
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 1/2 kg Long beans — cut into 1 inch pieces
- 2 nos Onion
- 5 nos Dry chillies
- 1 cup Coconut — grated
- 1 Clove Garlic
- 1 tsp Mustard seeds
- Curry leaves, a few
- Coconut oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing spicy payar thoran, first Heat the oil in a kadai. let the mustard seeds crackle.
Step 2
Crush onion, dry chillies and garlic. Add this to oil and sauté. Add long beans and fry again.
Step 3
Add salt and little water. Cook well in low flame.
Step 4
When done, add coconut grated and Stir everything together thoroughly.
Step 5
Oil should be separated from it.
Step 6
Spicy payaru thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
