Spicy Marination For Storing Thawed Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 8 servings
- 1 kg Chicken breast skinless and boneless, thawed
- Ginger garlic paste - 1/2 tsp
- 1/2 tsp Turmeric powder
- 1 tsp Hot chilli powder
- 1 tsp Moms masala powder Cloves, Cardamom, Cinnamom in equal measures of 2 dsp, quarter of a nutmeg, 1 tbsp each aniseed, jeera and whole black pepper
- 1/2 tsp Salt or
- 2 tbsp Pizza sauce — optional
Preparation
Step 1
Cube the chicken breast and set aside.
Step 2
Mix all the ingredients except chicken and make a paste, adding just enough water to it.
Step 3
Smear it over the chicken and leave it in the refrigerator in a closed container.
Step 4
Curry it in any indian style u want.
Step 5
It can be baked with vegetables without adding more spices. :- Use in portions or as whole, as per the requirement of the family.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
