Spicy Grilled Vegetables
Brinjal, potato and other vegetables are marinated and grilled.
Ingredientsfor 4 servings
- 1 nos Brinjal
- 2 nos Tomatoes
- 2 nos Potato
- Turmeric powder A pinch
- 2 nos Onion
- 1 tsp Garlic paste
- 1/2 tsp Red chilly powder
- Black pepper powder, to taste
- 1/2 tsp Lemon juice
- 1 tbsp Oil
- Salt, to taste
Preparation
Step 1
Cut the vegetables into medium sized pieces. Make a paste with lemon juice, turmeric powder, chilly powder, garlic paste, oil and required salt. Apply this mixture on vegetables and allow to marinate for 15 minutes.
Step 2
Arrange the vegetables in skewers and grill on high heat till the vegetables are done.

Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
