Special Yummy Fish Fry(Meen)
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- Fish : 2 nos
- Chilly powder : 2 tsp
- Turmeric powder : 1 tsp
- Coriander powder : 1 tsp
- Garam masala : 1 tsp
- Salt, to taste
- Oil :2 tsp
Preparation
Step 1
Make small cuts on fish flesh so that we can fix the masala in to it.
Step 2
Apply salt, chilly powder, turmeric, coriander powder and garam masala on fish.
Step 3
Keep for 30 minutes.
Step 4
Heat a pan and add oil when it gets hot keep the fish in it and make it fry deeply both sides.
Step 5
Enter Step.
Step 6
When fry over wipe off excess oil and serve it.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
