Special Puri
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 11/2 cup All purpose flour Maida
- Salt A pinch
- 2 tsp Curd
- 2 tbsp Sugar
- 1/4 tsp Baking powder
- Cold water enough to make a dough
- Oil enough to fry puri
Preparation
Step 1
Mix all the above ingredients well.
Step 2
Add cold water and knead to make a dough, knead well till dough is soft.
Step 3
Leave dough for 30 minutes.
Step 4
Make balls very small about the size of 1/2 the size of a lime.
Step 5
Roll and make sure that the rolled ones are not left open for too long as they tend to dry and this makes them absorb too much oil.
Step 6
Heat the oil in a fry in hot oiling pan.
Step 7
Fry them in heated oil, add enough oil to ensure that the puri is well covered.
Step 8
Put on a kitchen towel to drain. Serve hot.
