Special Potato Kurma
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 3 nos Potatoes large
- 2 nos Onion(finely chopped) large
- 3 nos Green chillies
- 1" piece Ginger
- 3 nos Garlic pods
- 1 nos Tomato
- 10 nos Cashew
- 1/2 tsp Turmeric powder
- 1 tsp Chilly powder
- Salt, to taste
- 1/4 tsp Garam masala powder
- Coriander leaves A small bunch
- 3 - Oil
- 1/2 tsp Mustard seeds
- 2 tsp Fresh cream
Preparation
Step 1
Pour oil into a pan and heat it.
Step 2
Let the mustard seeds crackle.
Step 3
Add chopped onion and greenchillies and fry, till they goes golden brown.
Step 4
Grind together ginger and garlic along with cashew and make a smooth paste.
Step 5
Mix this paste and cook until the raw smell goes.
Step 6
Add tomatoes into this and cook for some time.
Step 7
Add masala powder, turmeric powder and chilly powder along with salt and Stir everything together thoroughly.
Step 8
When a nice aroma comes, add the potato pieces along with 2 cups of water and allow it to boil.
Step 9
When the gravy starts to thicken,Add the fresh cream into it and stir.
Step 10
Finally add chopped coriander leaves and take it off the heat.
Tip
