Special Potato Curry Easy
This homestyle potato curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 500 g Potato
- 1 nos Onion
- 4 nos Green chilli
- 1 nos Coconut
- 1/2 tsp Cumin seeds
- Coriander leaves, to taste
- Salt, to taste
- Water, to taste
- 11/2 tsp Coriander powder
- 1 tsp Chilly powder
- 1/2 tsp Turmeric powder
Preparation
Step 1
Roast the coconut and grind it to a fine paste. And set aside.
Step 2
Cook potato, onion, green chilly in water with salt and roasted masala.
Step 3
Mix the grinded coconut, coriander leaves and simmer in low flame for 5 minutes.
Step 4
Cook shallots in oil and mix in with the curry.
Step 5
Serve it with poori.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
