Special Potato Curry
Rich, fragrant, and full-bodied — this potato curry gets its depth from slow-cooked shallots and a careful balance of chilli heat and tang. Serve with appam, rice, or porotta.
Ingredientsfor 4 servings
- Potato ( boiled and mashed ) : 2 nos
- Onion : 2 nos — chopped
- 3 nos Slitted green chilli : 2
- Mustard seeds : 1 tsp
- Sesame seeds : 1 tsp
- Coriander leaves : ½ cup — chopped
- Oil : 1 tsp
- Turmeric powder : ½ tsp
- Salt, to taste
Preparation
Step 1
Heat the oil in a kadai add mustard seeds and sesame seeds.
Step 2
When the seeds allow to crackle add chopped onion and slitted chilli, stir till it turn into a light golden colour.

Add salt and turmeric powder. give it a good stir.

Stir in chopped coriander leaves and mashed potatoes.

Stir everything together thoroughly.

Remove into a serving bowl and serve with puri.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
