Special Mutta Marichathu
Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 3 servings
- Egg : 3 nos
- All purpose flour : 1 tsp
- Cashew nut : 5 nos
- Sugar : 1 tsp
- Salt : a pinch
- Cardamom : 1 no
- Dry grape : 5 nos
Preparation
Step 1
Beat the egg with sugar and salt.
Step 2
To this add cardamom, sliced cashew nuts and dry grape.
Step 3
Give it a good stir and add all purpose flour to it.
Step 4
Give it a good stir.
Step 5
Heat a pan add oil in it and when it gets hot add the egg batter to it.
Step 6
Close it and cook both sides.
Step 7
Serve while still hot with tea or coffee.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
