Special Egg Pathiri
Flour, eggs, dry nuts and other ingredients are combined to make a special type of pathiri.
Ingredientsfor 5 servings
- 2 cup All purpose flour Maida
- 4 nos Eggs
- 1 tsp Cardamom powder (Elakka)
- 2 tbsp Sugar
- 50 g Cashew nuts — chopped
- 50 g Raisins/Kismis
- 6 nos Shallots — chopped (Kunjulli)
- Salt, to taste
- Water, to taste
- Ghee, to taste
Preparation
Step 1
For preparing special egg pathiri, first knead flour well by adding water and salt to taste.
Step 2
Make small balls out of the dough and press it as we make chapatti.
Step 3
Apply ghee on it and fold the four corners and press again(this is called kannu pathiri) and then set aside.
Step 4
For preparing egg filling, mix eggs with sugar and cardamom powder. Scramble the egg mixture in a pan.
Step 5
Fry cashew nuts, kismis and shallots in ghee one by one separately. Add it to the egg scramble made above and give it a good stir. Set aside.
Step 6
Get an oiled tawa and fry the kannu pathiri, pouring in little ghee, till it becomes lightly browned.
Step 7
Fill the egg filling inside the fried kannu pathiri with a spoon.
Step 8
Fry it again in the pan on both sides in low heat.
Step 9
Special egg pathiri, a recipe is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
