Special Bread Toast
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 3 nos Eggs
- 100 ml Milk
- 12 nos Bread slices
- 150 ml Clarified butter/Ghee
- 50 g Sugar
- Cardamom powder A pinch
Preparation
Step 1
For preparing special bread toast, take a bowl and break the eggs into it. Add milk and give it a good stir.
Step 2
Add the sugar and cardamom powder to the egg-milk mixture and beat vigorously until a thick foam is formed.
Step 3
Get the bread slices into a wide plate and pour the above mixture over them.
Step 4
Wait for about ten minutes so that the bread slices absorb the mixture well.
Step 5
Put a shallow pan on the stove, add ghee and heat. Put the bread slices one by one adding ghee whenever necessary and fry both sides to deep brown.
Step 6
Special bread toast is ready. Serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
