Soyabean With Veggies Stir Fry
Soyabean chunks cooked with grated, spinach and other ingredients.
Ingredientsfor 3 servings
- 1/2 cup Soya beans
- 1/4 cup Spinach — chopped
- 1/2 cup Carrot — grated
- 1/2 cup Beans cut length wise
- 2 tbsp Coconut — grated
- 3 nos Garlic cloves — crushed
- 2 nos Green chillies — chopped
- 1 tsp Chilly powder
- 3 nos Shallots — finely chopped (Kunjulli)
- Turmeric powder A pinch
- 1/2 tsp Mustard seeds
- 1/4 tsp Cumin seeds (Jeerakam)
- 2 sprig Curry leaves
- Oil, to taste
- Salt, to taste
Preparation
Step 1
First cook the soya beans in boiling water for 10 minutes. Drain and squeeze out the water completely.
Step 2
Shred the cooked soya bean. Set aside.
Step 3
Grind coarsely grated coconut with garlic, shallots, cumin seeds, and green chillies.
Step 4
Pour oil into a pan and heat it and let the mustard seeds crackle and curry leaves. Stir in roughly ground coconut mixture and fry for a minute.
Step 5
Add ground soya, spinach, carrot, beans and required salt. Let it cook for 2 minutes with a covered lid.
Step 6
Remove the lid and stir fry the thoran till there is no trace of water.

Note: Its better to add a crushed garlic clove in the water while boiling the soyabean in order to avoid the raw smell of soyabean.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
