Sole-Manthal Fish Fry(Meen)
Slow-roasted in coconut oil with a generous hand of spices, this fish fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1/2 kg Manthal Fish
- 1 nos Onion
- 2 nos Dry chillies
- Ginger A small piece
- 1 tbsp Chilly powder
- 1 tsp Coriander powder
- 1 tsp Turmeric powder
- 1 tsp Tamarind
- Salt, to taste
Preparation
Step 1
For preparing sole/manthal fish fry, grind onion, dry chillies, chilly powder, coriander, turmeric,tamarind, ginger and salt.
Step 2
Apply this on fish and set aside for 15 minutes.
Step 3
Fry this in oil and serve hot.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
