Soft Puttu
Steamed layers of rice flour and coconut inside a cylindrical mould — puttu is Kerala morning fuel. It crumbles apart on the plate and soaks up kadala curry, banana, or just a spoonful of sugar and ghee.
Ingredientsfor 4 servings
- 1/4 kg Palakkadan matta rice
- 1/2 Of Coconut
- Salt, to taste
Preparation
Step 1
Wash and soak the matta rice in water for about 4-5 hours.
Step 2
Strain it in a siever.
Step 3
After half an hour grind it to make a fine powder.
Step 4
Mix salt in one glass of water. 5)Mix the put powder by sprinkling water.
Step 5
Keep it for 5 minutes.
Step 6
Make puttu using puttu kutti by layering grated coconut in between as and when required.
Step 7
Steam for 3 minutes.
Step 8
Remove and serve hot with stew or kadala curry.
Step 9
The specialty of this puttu is u need not heat the puttu powder as we do for making the usual puttu!
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
