Soft & Easy Vellayappam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 4 servings
- 2 cup Idli ari (Pachari)
- 2 tbsp Black gram (Uzhunnu)
- 1/2 cup Cooked rice
- 1/2 tsp Yeast
- Salt, to taste
Preparation
Step 1
Soak pachari/idli rice & black gram for about 8 hrs.
Step 2
Grind well the soaked rice & black gram along with the cooked rice.
Step 3
Add yeast and Stir everything together thoroughly.
Step 4
Leave this till the mixture rises.
Step 5
Add salt and Stir everything together thoroughly.
Step 6
Heat a tawa and make soft appams.
Step 7
Serve while still hot with chicken or egg curry.
Tip
The swirling motion takes practice. Your first two appams will likely be imperfect — consider them warm-up rounds.
