Soft And Fluffy Idli - Dosa
Crispy on the edges, soft in the middle — this soft and fluffy idli - dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 10 servings
- 11/2 cup Basmati Rice or (Pachari)
- 1/2 cup Parboiled rice Chembavari
- 3/4 cup Black gram parippu (Uzhunnu)
- Salt, to taste
- 1 piece Ginger — optional
Preparation
Step 1
Soak rice(both the rice) and black gram separately for 2 hours.
Step 2
Grind the soaked rice along with ginger into a smooth thick paste.
Step 3
After that, grind the urid dal until the dough is smooth and fluffy.
Step 4
Mix it well with rice paste by adding salt.
Step 5
Keep it for 12 hours for fermentation.
Step 6
Mix it again and make soft and Idlis and dosas.
Step 7
Serve while still hot with coconut chutney or sambar.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
