Snake Gourd-Padavalanga Thoran
one of the easiest of dishes, a variety favorite that goes well as an accompaniment with hot rice. The wonderful aroma of coconut mixture and the simplicity of preparation make Snake Gourd-Padavalanga Thoran a favorite one.
Ingredientsfor 3 servings
- 250 g Snake gourd Padavalanga
- 1/2 Of Coconut — grated
- 4 nos Garlic cloves
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric powder
- 3 nos Green chillies
- 1 tsp Mustard seeds
- Curry leaves, a few
- Salt, to taste
- 3 tbsp Coconut oil
- 2 nos Dry red chillies (Kollamulaku)
- 2 tsp Rice Puzhukkalari (Pachari)
Preparation
Step 1
For preparing Snake Gourd-Padavalanga Thoran, first remove seeds and other stuff from inside the snake gourd.
Step 2
Clean it well and chop it finely. Set aside.
Step 3
Place together the grated coconut, green chillies, garlic, turmeric powder, curry leaves and cumin seeds in a mixer bowl and run it once to make it into a coarse form.
Step 4
Set a pan over medium heat and pour in the oil or a kadai.
Step 5
Let the mustard seeds crackle and cook red chillies, rice and curry leaves.
Step 6
Add the chopped veg followed by the coconut mixture and salt.
Step 7
Stir everything together thoroughly the whole thing.
Step 8
Put the lid on and cook for about 5 minutes.
Step 9
Remove the lid and continue cooking on a low flame till Snake Gourd-Padavalanga Thoran is done.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
