Simple Vegetarian Coconut Rice
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 6 servings
- Rice : 2 cup
- Garam masala : 2 tsp
- Green chilly : 1 no
- Onion : ½ no
- Potato : ½ cup
- Carrot : ½ cup
- Coconut milk : 2 cup
- Ghee : 1 tsp
- Salt, to taste
- Water : 1 ½ cup
Preparation
Step 1
Heat a pan add oil or ghee in it and when it hot add onion to it and give it a good stir.
Step 2
To this add carrot and potato and cook it, stirring well.
Step 3
Next, add 1 ½ cup water to it.
Step 4
When it gets boiled add rice to it and close the pan for 5 minutes.

Next, add coconut milk to it and give it a good stir.
Step 7

Then close it and wait until it gets cooked.
Step 9
When rice gets cooked stir it well and serve hot.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
