Simple Egg Curry Easy
A deeply satisfying simple egg curry easy simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 2 servings
- 4 nos Eggs
- 2-3 Cloves Garlic — crushed
- 1 inch Ginger — finely chopped
- 2 nos Onion — finely sliced
- 1 nos Tomato — chopped
- 2 nos Green chillies — sliced
- 1/4 tsp Turmeric powder
- 1 tsp Egg masala
- Curry leaves, a few
- Oil, to taste
- 1/2 cup Water
Preparation
Step 1
Boil the eggs. 2)Heat the oil in a tawa and cook chopped ginger, garlic and green chillies.
Step 2
Stir in onion and cook until it becomes light in colour.
Step 3
Next add chopped tomato and let it cook till the water from onion and tomatoes come out.
Step 4
Add the egg masala as per instruction and add water.
Step 5
When curry starts to boil, add the eggs. Remember to give a slit in the middle of the eggs.
Step 6
Put the curry leaves and close with a lid for two minutes and turn off the gas.
Step 7
Serve egg curry with phulkas or chappathi.your dish.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
