Simple Cake Pudding
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 1 nos Sponge cake or butter cake or any other cake
- 1/2 cup Ice cream
- 4 - Arrowroot buscuits
Preparation
Step 1
Cut the cake into slices (thickness of a bread slice).
Step 2
Microwave the cake slices for 1 min so that it becomes warm n spongy.
Step 3
Microwave good quality ice cream for 1/2 a min.
Step 4
Pour ice cream over the warm cake slices.
Step 5
The ice cream will be completely absorbed by the cake.
Step 6
Lay 1 soaked cake slice on a serving plate.
Step 7
Place on top an arrowroot biscuit.
Step 8
Place another soaked slice over this.
Step 9
It will look like cake sandwich with arrowroot filling.
Step 10
Refrigerate for 1 - 2 hrs.
Step 11
Instead of arrowroot biscuits, you can fill with anything that is available like dates, other fruits, nuts, cornflakes etc.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
