Shrimp Fry
an awesome mouth watering delicacy that can be prepared in very little time. The crispy coconut flavored outer crust makes Shrimp Fry one of the most sought after dish. Shrimps are nutritious and are high in demand.
Ingredientsfor 4 servings
- 500 g Large Fresh Shrimp
- 2 nos Eggs
- 1/4 cup Water
- 1/2 cup Corn Starch
- 5 tbsp Flaked Coconut
- 1 tbsp Sugar
- 1 tsp Salt
- 1/2 cup Flour
Preparation
Step 1
For preparing Shrimp Fry, first mix together eggs and water. Set this aside.
Step 2
Place 1/4 cup of cornstarch in bowl for dusting of shrimp.
Step 3
Mix in a separate bowl, 1/4 cup (the remainder) of cornstarch, sugar, salt and flour and blend well.
Step 4
Heat oil for deep-frying.
Step 5
Roll shrimp in cornstarch mixture, then in egg and finally roll in coconut flakes.
Step 6
Place shrimp in hot oil and fry in hot oil until done. Take care not to overcook them.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
