Semolina Payasam
Semolina/rava cooked in milk which is quite popular in malabar.
Ingredientsfor 5 servings
- 150 g Semolina roasted, Rava
- 2 litre Milk
- 175 g Sugar
- 1 nos Onion thinly — chopped
- 2 tbsp Ghee
- 30 g Cashew nuts broken
- 30 g Raisins Onakka munthiri
- 1 tsp Cardamon powder
Preparation
Step 1
Get a deep bottomed pan and boil milk.
Step 2
Add sugar and stir.
Step 3
Add roasted semolina and stir gently without forming lumps.
Step 4
Cook in low flame. When the milk thickens, add cardamom powder. Remove from fire.
Step 5
Place a pan on the stove and pour ghee. Heat the pan and fry chopped onions, nuts and raisins.
Step 6
Pour this over the semolina payasam and serve hot.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
