Semolina Ladoo
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 500 g Semolina
- 500 g Sugar
- 3 tsp Milk
- 1 cup Coconut — grated
- 250 ml Ghee
- Raisins and cashew nuts, to taste
- 2 tsp Cardomom powder
- Cloves, a few
Preparation
Step 1
Fry coconut till water is absorbed and set aside.
Step 2
Fry cahews and raisins in ghee and set aside.
Step 3
Fry Semolina till it turns golden(sweet aroma comes).
Step 4
Powder sugar and semolina and Stir everything together thoroughly.
Step 5
Mix coconut, cashews, raisins, cardomom powder,cloves and semolina Stir everything together thoroughly.
Step 6
To this add warm milk and Stir everything together thoroughly.
Step 7
Set a kadai on the stove, warm ghee and add to the mixture to make small lemon-sized balls when the ghee is warm.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
