Semiya Noodles
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 100 g Vermicelli
- Carrot A small piece
- 1 nos Green chilly
- 1/2 Of Onion
- 1 tsp Oil
- Water, to taste
- 1 nos Egg
- Salt, to taste
Preparation
Step 1
Heat a vessel and cook vermicelli for 5 minutes on low heat.
Step 2
In the mean time Heat the oil in a vessel and cook onion, carrot, green chilly for 3-5 minutes.
Step 3
Add salt and water and let it boil.
Step 4
Add vermicelli into the boiling water.
Step 5
Cook it till the water gets evaporated.
Step 6
Add one egg, scramble and Continue cooking for 2 to 3 minutes.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
