Semiya Halwa
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 3 servings
- 1 cup Semiya
- 1/2 litre Milk
- 4 tbsp Ghee
- 1 cup Sugar
- Raisins
- Cashewnuts
Preparation
Step 1
Fry semiya in ghee till it turns brown in colour.
Step 2
Add milk and sugar. Bring to a gentle boil.
Step 3
Keep boiling till the milk evaporates.
Step 4
Add ghee little by little and keep stirring all the time so that it doesn’t stick to the pan.Do this till the milk completely evaporated and the mix is completely dry.
Step 5
Garnish with cashews and almonds.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
