Semiya - Chowari Kheer
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 2 servings
- Sago - 1 cup
- Sago - 1 cup
- Milk - 1/2 litre
- Milkmaid - 1 cup, condensed milk
- Ghee - 1 tbsp
- Raisins & cashew nuts
- Cardamom powder
- Sugar –, to taste
Preparation
Step 1
Boil water in a pan and add sago.
Step 2
Boil till it becomes transparent. Give it a stir now and then.
Step 3
Stir in the milk.
Step 4
Stir in the roasted semiya.
Step 5
Stir it add sugar and milkmaid.
Step 6
Cook till the semiya is done.keep a pan and roast cashew nuts and raisins.
Step 7
Add this and cardamom powder to the kheer and mix.
Step 8
Its ready.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
