Scrambled Egg Puttu-Egg Bhurji Puttu
The breakfast that powers most of Kerala before 8 AM. Rice flour, grated coconut, and steam — nothing more, nothing less. The texture should be fluffy and loose, never dense or packed.
Ingredientsfor 2 servings
- For egg bhurji
- 3 Egg
- 1 Onion
- 2 Tomato
- 2 Green chilly
- 1/2 tsp Turmeric powder
- 1/4 tsp Red chilly powder
- Curry leaves, a few
- Salt, to taste
- 1 tbsp Oil
- For puttu
- 1 cup Rice flour puttu podi — roasted
- Salt, to taste
Preparation
Step 1
Get roasted rice flour in a bowl followed by a few water.slowly add water little by little over the rice flour and Stir everything together thoroughly.
Step 2
Heat cocconut oil in a pan add chopped onion,green chilly,chopped ginger and curry leaves.when it goes golden brown add tomato and all masalas,Let it cook for 2 minutes and add the beaten egg into it.give it a good stir until the eggs are fully cooked.Now the egg bhurji is ready.
Step 3
Get the puttu maker mould and add 2tbsp egg bhurji on it.
Step 4
Add 3-4 tbsp puttu podi.
Step 5
Top it with 2 tbsp egg bhurji and cover the top.
Step 6
Heat puttu maker,here I use pressure cooker.place it on the nozzle of the pressure cooker and steam let it go for 4-5 minutes.
Step 7
Egg bhurji puttu is ready.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
